gnu: python-pylast: Switch to pyproject.
* gnu/packages/music.scm (python-pylast):
[source]: Switch to git-fetch.
[build-system]: Switch to pyproject-build-system.
[arguments]<#:tests?>: Enable them.
<#:phases>: Add phase 'set-version.
[native-inputs]: Add python-setuptools. Remove python-coverage.
