* gnu/packages/python-xyz.scm (python-pydantic): Update to 1.10.19.
[build-system]: Swap to pyproject-build-system.
[arguments]<test-flags>: Deselect one failing test.
[native-inputs]: Add python-setuptools and python-wheel.
